Ingredients

  • 1 teaspoon corn oil
  • 4 cups flour
  • 4 teaspoons Jamaican mixed baking spice (see page 98)
  • 4 teaspoons baking powder
  • 1/2 teaspoon ground nutmeg
  • Pinch salt
  • 4 tablespoons butter, at room temperature
  • 2 cups demerara sugar
  • Meat of 1 fresh coconut, finely grated
  • 4 teaspoons vanilla extract
  • 1 egg, lightly beaten
